This vegan chipotle mayo recipe is easy and quick to make. Dairy free and eggless, it creates a creamy, spicy and flavorful mayonnaise!
It’s great on sandwiches, wraps, tacos/ burritos, burgers, fries or as a chip dip! You can really use this however you want.

Is Chipotle Mayo Vegan?
Most chipotle mayo found at the grocery store or in restaurants is not vegan. Traditional mayo is made with eggs, so unless it’s specified as a vegan mayo, those recipes are likely not vegan.
Chipotle mayo is easy-to-make at home with any vegan mayo you like as the base. You can make your own or use a store-bought vegan mayo, which is now very easy to find at most grocery stores.
Ingredients and Substitutions for Chipotle Mayo
This recipe starts with a base of vegan mayo with some flavorful ingredients added to create a tasty sauce, dip or spread!
- Vegan mayo: Any vegan mayo can work as the base for this recipe. Store-bought vegan mayo is easy to find these days, but it’s just as easy to whip up some homemade vegan mayo.
- Chipotle pepper in adobo sauce: For that delicious chipotle flavor, you’ll need a can of chipotle peppers in adobo sauce. The recipe calls to use 1 pepper, but you can use 2-3 depending on how large they are and how spicy you want your mayo to taste. Not sure what to do with the rest of the can? I add chipotle peppers to my 3 bean chili for a delicious and hearty meal!
- Lime juice: Some acidity and fresh citrus flavor from lime juice brightens up this creamy, spicy sauce. Lemon juice can also work. ½ tablespoon of white or apple cider vinegar can also work if you don’t have limes on hand.
- Maple syrup: A touch of sweetness helps balance the chipotle mayo’s flavors. Any type of sugar or sweetener should work, but I’ve only tested this with maple syrup.
- Garlic and onion powder: Add extra flavor with some garlic and onion powder.
- Ground cumin: Chipotle peppers are smoky, but ground cumin is a fantastic addition for extra smoky flavor.
- Salt and pepper: Add salt and pepper to taste to achieve your desired flavor.
How to Make This Recipe
This recipe is extremely quick and easy to make, especially if you already have mayo prepared or use a store-bought option.
Step 1: Prepare Vegan Mayo
If needed, prepare some vegan mayo. You can make a classic vegan mayo at home or try out my recipe for cashew mayo (which is what I used for these photos/ video).
Otherwise, use store-bought vegan mayonnaise.
Step 2: Mix Chipotle Mayo
Chop the chipotle pepper(s) as finely as possible, then mix all the ingredients together until combined. Taste and adjust any spices as needed.
You could also add all the ingredients to a small blender and blend until smooth. Without blending, there are some small pieces of chipotle pepper throughout the mayo. I don’t have a small blender so I just chop the pepper as small as I can.
It’s possible to serve this recipe right away, but is best served cold. Chilling for 30 minutes before serving helps the flavors come together nicely.
Vegan Mayo Variations
There’s plenty of ways to make vegan mayo at home and spice it up however you like.
You can use my classic vegan mayo or cashew mayo as the base for this recipe.

How to Store Leftover Mayonnaise
Refrigerate leftover mayo in an airtight container for up to 5 days. It may last longer in your fridge, but I haven’t tested it to know exactly how long.
You may also freeze this recipe in a freezer-safe container for a few months. To thaw, simply place into your fridge overnight before using the next day.

Ingredients
- ½ cup vegan mayonnaise (120 grams)
- 1-2 chipotle peppers in adobo sauce
- 1 tablespoon lime juice (15 millilitres)
- 1 teaspoon maple syrup (5 millilitres)
- ½ teaspoon salt (or to taste)
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- ⅛ teaspoon ground cumin
- ⅛ teaspoon black pepper
Instructions
Step 1: Prepare Vegan Mayo
- If you need to, prepare homemade vegan mayo. You can also use store-bought vegan mayonnaise as the base.½ cup vegan mayonnaise
Step 2: Mix Chipotle Mayo
- Finely chop your chipotle pepper(s).1-2 chipotle peppers in adobo sauce
- Add all ingredients to a small bowl and stir together until well mixed.½ cup vegan mayonnaise, 1-2 chipotle peppers in adobo sauce, 1 tablespoon lime juice, 1 teaspoon maple syrup, ½ teaspoon salt, ¼ teaspoon garlic powder, ¼ teaspoon onion powder, ⅛ teaspoon ground cumin, ⅛ teaspoon black pepper
- Serve immediately, or chill in a refrigerator for 30 minutes for best flavor and consistency.
