  • Large bowl
  • Baking dish

  • Preheat oven to 375 °F.
  • In a large bowl, mix the 2 ½ C rolled oats, 3 tbsp ground flaxseed, 4 tbsp hemp seeds, 2 tsp cinnamon, ½ tsp salt and 1 ½ tsp baking powder.
  • In a separate bowl, mash 2 small bananas (with a fork). Measure to make sure it’s roughly ⅔ C (too much more will lead to mucky oatmeal, too little will result in dry oatmeal).
  • Stir ⅔ C plant-based milk, ⅓ C natural peanut butter and 1 tsp vanilla extract into the mashed banana.
  • Mix the wet ingredients into dry ingredients along with the blueberries. If using frozen blueberries, the purple color will blend into the mixture (and create purple oatmeal).
  • Grease a pan that is about 9x9 or 10x8 inches in size. I use an oil spray to grease pans.
  • Pour the oatmeal into the pan. The oatmeal should be about 2 inches thick for easy cooking.
  • Bake at 375 °F for 35-40 minutes.
