Equipment

Ingredients

  • 1 ½ cups banana , mashed then measured (385 g)
  • ½ cup brown sugar , packed (110 g)
  • cup vegetable oil (70 g/ 80 mL)
  • 1 ¾ cups all-purpose flour (260 g)
  • 2 teaspoons baking powder

Flavor Boosters (Optional)

  • 2 teaspoons vanilla extract (10 mL)
  • pinch of salt
  • cinnamon , to taste (1-2 teaspoons)
  • ½ cup flavor boosters (chocolate chips, crushed walnuts, etc.)

Instructions

Step 1: Prepare Wet Ingredients

  • Mash banana in a large mixing bowl with a fork or potato masher. Weigh the whole banana then mash, OR mash then measure it.
    1 ½ cups banana
  • Add brown sugar and vegetable oil to the banana and whisk to combine, making sure there are no clumps of brown sugar.
½ cup brown sugar, ⅓ cup vegetable oil

Step 2: Add Dry Ingredients

  • Add flour and baking powder to the wet ingredients.
    1 ¾ cups all-purpose flour, 2 teaspoons baking powder
  • If using optional flavor-boosting ingredients, add those now.
2 teaspoons vanilla extract, pinch of salt, cinnamon, ½ cup flavor boosters
  • Stir everything together until it’s just combined (stop when there are no clumps of flour left).

Step 3: Bake and Serve

  • Preheat the oven to 350 °F.
  • Grease a loaf pan with vegan butter/ margarine or non-stick cooking spray.
  • Pour the batter into your greased loaf pan and spread it into a flat layer (this is a thick batter).
  • Bake on the center rack for 45 minutes (or until a toothpick inserted into the loaf comes out clean). The top should be golden brown when baked.
  • Let the loaf sit for 1-2 minutes before carefully removing from its pan. Place onto a wire cooling rack and cool entirely before storing in an airtight container.
