Vegan Raspberry Peach Crisp with Nutritious Crumble Topping

This raspberry peach crisp is made vegan with a nutritionally balanced crumble topping. Full of flavorful fruit and an oatmeal-almond crisp, you can’t go wrong with this tasty vegan dessert.

Equipment

  • Glass baking dish (about 9 inches square)
  • Large bowl

Ingredients

  • 6 C raspberries and peaches (fresh or frozen)
  • ½ C rolled oats
  • C brown sugar (can substitute for coconut sugar; won’t be as sweet)
  • ¼ C almond flour (ground almonds)
  • ¼ C whole wheat flour
  • 2 tbsp ground flaxseed
  • 3 tbsp vegan margarine (or vegan butter)

Instructions

  • Preheat the oven to 350 °F.
  • Stir together ½ C rolled oats, ⅓ C brown sugar, ¼ C almond flour, ¼ C whole wheat flour and 2 tbsp ground flaxseed. Using a fork or your hand, cut the margarine into this mixture. Incorporate the margarine completely, until there are no apparent dry areas of loose flour/ oats.
  • Toss the fruit into a greased medium-sized glass baking dish (in the photos I’ve used a 7.5 x 9.5 inch oven-safe glass container). I use an oil spray to grease the baking dish.
  • Sprinkle the crumble topping over fruit.
  • For all fresh fruit, bake for 20-25 min. For fresh peaches with frozen raspberries, bake for 23-28 min. For fresh raspberries with frozen peaches bake for 30-35 min (may need a bit more depending on thickness of peach slices). For frozen raspberries and peaches (thickly sliced peaches) bake for 38-42 min.
