Vegan Edible Chickpea Cookie Dough

This edible cookie dough recipe is made from chickpeas and other delicious, nutritious ingredients. It’s vegan, dairy free, gluten free, soy free and can be made grain free! Don’t worry, it still tastes absolutely amazing.

Step 1: Process the Chickpeas

  • Drain and rinse a can of chickpeas. Add to a food processor along with peanut butter, maple syrup, vanilla extract and ground cinnamon plus a pinch of salt.
    2 cups chickpeas, ⅓ cup natural peanut butter, ⅓ cup maple syrup, 2 teaspoons vanilla extract, ½ teaspoon ground cinnamon, pinch of salt
  • Process on high speed until the mixture is as pureed and smooth as possible.

Step 2: Stir Together and Serve

  • Scrape the chickpea mixture from your food processor into a large mixing bowl.
  • Stir in the remaining ingredients: oat flour, almond flour and chocolate chips.
    ¼ cup oat flour, ¼ cup almond flour, ½ cup chocolate chips
  • Enjoy your raw cookie dough! Store leftovers in the fridge or freeze.
