Peanut Butter Banana Granola with Nuts

This easy vegan granola recipe is packed with oats, peanut butter, banana and nuts. It tastes like a deliciously crunchy banana bread. Can be made gluten free.

  • Baking tray
  • Parchment paper or silicone baking mat
  • Large mixing bowl


  • 2 C rolled oats
  • ½ C walnuts , chopped
  • ½ C pecans , chopped
  • 3 tbsp ground flaxseed
  • 3 tbsp hemp seeds
  • 1 tsp cinnamon
  • ¼ tsp salt (only if using unsalted peanut butter)
  • ¼ C maple syrup
  • ¼ C peanut butter (natural)
  • 2 tbsp avocado oil (or other neutral oil)
  • 1 tsp vanilla extract
  • 1 small banana , mashed (about ½ C)


  • Preheat oven to 325 °F.
  • In a large bowl, mash 1 small banana.
  • Stir in ¼ C maple syrup, ¼ C peanut butter (natural), 2 tbsp avocado oil and 1 tsp vanilla extract. Mix until smooth.
  • To the bowl, stir in 2 C rolled oats, ½ C chopped walnuts, ½ C chopped pecans, 3 tbsp ground flaxseed, 3 tbsp hemp seeds,
  • 1 tsp cinnamon and ¼ tsp salt (only if using unsalted peanut butter).
  • Once everything is mixed and the oats/ nuts are evenly coated with your peanut butter banana mixture, spread out onto a parchment (or silicone mat) covered baking tray.
  • Flatten into a single layer that’s about ½ cm (¼ inch) thick.
  • Bake for 25 minutes, until the granola is golden brown on the top and bottom.
  • Remove from oven and allow to cool completely before breaking apart the granola (use a spoon or your hands). Make sure the granola is cooled completely before storing in an airtight jar/ container in the fridge for up to a week.
