Vegan Waldorf Salad

This vegan Waldorf salad recipe is simple to make and is packed with all the classic ingredients you expect along with some delicious additions for maximum flavor! Add some cooked chickpeas to make this a well-balanced meal.

Ingredients

Classic Ingredients

  • 1 cup apple , chopped (about 1 medium apple)
  • 1 cup grapes , halved or quartered
  • ½ cup celery , chopped
  • ½ cup walnuts , crushed
  • ¼ cup green onion , chopped
  • 2 tablespoons vegan mayonnaise
  • 3 tablespoons vegan yogurt , plain, unsweetened
  • ¼ teaspoon salt

Optional Added Flavors

  • 2 tablespoons parsley , minced
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • black pepper (to taste)

Instructions

  • Chop apples , grapes, celery, walnuts, green onion and parsley (if using). Add to a large bowl.

  • Stir in vegan mayonnaise, vegan yogurt and salt. If using, stir in lemon juice, Dijon mustard and black pepper.

  • Toss until all ingredients are well combined.
  • Serve cold! This salad is best after resting for 30 minutes in the fridge.

Notes

Mayo only: If you only have/ want to use vegan mayonnaise for the dressing, use 4 tbsp.
Yogurt only: If you only have/ want to use unsweetened, plain vegan yogurt, use 6 tbsp.
