Ingredients

Spinach Salad Base

  • 6 cups spinach
  • ½ cup pecans
  • ½ cup dry cranberries
  • ¾ cup cucumber
  • 1 medium avocado
  • ¼ cup hemp seeds
  • ½ cup green onion

Balsamic Dressing

Instructions

  • Prepare salad ingredients by chopping them and adding to a salad bowl.
    6 cups spinach, ½ cup pecans, ½ cup dry cranberries, ¾ cup cucumber, 1 medium avocado, ¼ cup hemp seeds, ½ cup green onion
  • Whisk together the dressing ingredients or shake together in a jar.
    3 tablespoons balsamic vinegar, 1 tablespoon Dijon mustard, 2 tablespoons maple syrup, 2 tablespoons extra virgin olive oil, ½ teaspoon salt
  • Toss the salad with dressing before serving and enjoy!
