Make "Wet" Mix

Add chickpeas to a blender with onion and all other ingredients that form your liquid seitan base. Blend until very smooth.

Make "Dry" Mix

In a large bowl, stir together vital wheat gluten and all remaining ingredients.

Form Seitan Dough

Pour the blended ingredients into the “dry” mixture. Stir until a ball of dough forms, then switch to mixing with your hand.  Knead for about 1 minute. It should feel firmer as you go.

Bake in Oven

Preheat your oven to 350 F. Shape the seitan dough into a slightly oval roast.

Bake in Oven

Place onto a sheet of tin foil and wrap the seitan tightly.  Put the roast into a baking dish, then into your oven. Cook for 1 hour and 45 mins, flipping halfway through.
