SEITAN SAUSAGE

Prep "Wet" Ingredients

Cook onion and garlic in oil until they soften. Add tomato paste, soy sauce, wine vinegar and miso paste.  Stir to evenly mix ingredients.

Add chickpeas to a food processor along with your cooked onion mixture. Blend until smooth (small chickpea flecks are okay).

Prep "Wet" Ingredients

Mix Dry Ingredients

In a large bowl, whisk gluten flour with remaining spices. Scrape the blended chickpea mixture into your mixing bowl and start to combine.

Form Seitan Dough

Stir until a dough starts to form, then knead it using your hands. This is a very firm seitan dough, so it takes some work to come together.

Shape Sausage

Cut the dough into 8 equal pieces and shape each one into a sausage. Wrap each sausage in a piece of parchment paper, then wrap again in tin foil.

Steam Sausages

Add your sausages to a steaming basket with water in it. Place a lid on the pot. Boil the water and steam the sausage for 40 minutes.

Serve Sausages

Once cooked, cool sausages for at least 10 minutes. The sausages can be pan-fried, grilled, eaten as-is or used in any recipe you like.
