Mug Cake Ingredients

MIX LIQUID INGREDIENTS

In a large mug, stir all of the liquid ingredients, including plant-based milk, sugar, oil, lemon juice, lemon zest, vanilla and salt.

Mix Liquid Ingredients

STIR IN DRY INGREDIENTS

Add flour and baking powder. Stir until a batter forms and there’s no clumps of flour remaining. Try not to overmix; a few small lumps are okay.

Stir in Dry Ingredients

COOK + SERVE

Microwave the cake for about 80 seconds, then remove and let sit for at least 1 minute before serving.  If desired, prepare a lemon glaze and drizzle across the top of your mug cake.
