Ground flaxseed Brown sugar Apple sauce Vegetable oil Vanilla extract Banana Crushed pineapple Flour Cinnamon Nutmeg Baking soda + powder Pecans Vegan cream cheese Icing sugar

Recipe Ingredients

1. Prep Flaxseed "Egg" 2. Mix Wet Ingredients 3. Stir in Dry Ingredients 4. Bake and Cool 5. Frost Cake

How to Make It

Add water to flaxseed and stir. Set aside for later.

Step 1: Prep Flaxseed "Egg"

Whisk brown sugar, apple sauce, vegetable oil and vanilla extract.  Mash bananas then add to wet mix. Add crushed pineapple and flax egg. Stir until well combined.

Step 2: Mix Wet Ingredients

To the wet mix, add flour, cinnamon, nutmeg, baking powder + soda and pecans. Stir until no clumps of dry ingredients remain. The batter will be thick!

Step 3: Stir in Dry Ingredients

Grease a 9-inch round pan and pour cake batter into it. Bake at 350 °F for 35-40 min. Cool on a wire rack for a couple hours before frosting.

Step 4: Bake and Cool Cake

Add vegan cream cheese, icing sugar and vanilla extract to a mixing bowl. Whip with an electric beater until smooth. Cover with frosting!

Step 5: Frost Cake
