Add water to flaxseed and stir. Set aside for later.
Step 1:Prep Flaxseed "Egg"
Whisk brown sugar, apple sauce, vegetable oil and vanilla extract. Mash bananas then add to wet mix. Add crushed pineapple and flax egg.Stir until well combined.
Step 2:Mix Wet Ingredients
To the wet mix, add flour, cinnamon, nutmeg, baking powder + soda and pecans.Stir until no clumps of dry ingredients remain.The batter will be thick!
Step 3:Stir in Dry Ingredients
Grease a 9-inch round pan and pour cake batter into it.Bake at 350 °F for 35-40 min.Cool on a wire rack for a couple hours before frosting.
Step 4:Bake and Cool Cake
Add vegan cream cheese, icing sugar and vanilla extract to a mixing bowl.Whip with an electric beater until smooth.Cover with frosting!
