These both refer to a dish with layers of potato, veggies and meat. This recipe uses a vegan meat substitute (TVP) which offers great texture and lots of filling protein. 

TVP "Meat" Filling

Textured vegetable protein (TVP) refers to small, dry soy crumbles.  They're inexpensive, easy to find and easy to use!

Sweet Potato Topping

It also packs in flavor and nutrition from a layer of mashed sweet potato! Use any variety of potato you like or have on hand.

Base Filling: TVP Olive oil Onion Garlic Celery Carrot Peas Corn Tomato paste Soy sauce Apple cider vinegar Thyme Sage Celery seed Salt Black pepper

How to Make It

Prepare Potatoes

Step 1:

Peel + dice the potatoes. Add them to a large pot and cover with water. Boil until soft, drain water, add remaining ingredients.

Mash until the potatoes are creamy. You can also use an electric hand mixer. Set aside for assembly.

Hydrate TVP

Step 2:

In a large pan, toss the TVP with olive oil then add vegetable broth.  Cook until your TVP absorbs all the liquid.

Step 3:

Using the same pan, cook your vegetables in some extra olive oil. Add cooked TVP, corn, peas and seasonings. Stir to combine.

Assemble, Bake and Serve

Step 4:

Preheat your oven and grease a 9x13 baking dish. Add the TVP + veggie filling. Spread into an even layer.

Top the base layer with your mashed potatoes.  Spread with a spoon or use a piping bag to look fancy!

Bake until cooked through to the center. Let sit for 10 minutes before serving. Enjoy!

Make this meal your own!  1. Use lentils instead of    TVP and veggie broth 2. Use white potato    instead of sweet.

Common Variations

Refrigerate in an airtight container for up to 5 days. Reheat in a microwave or conventional oven until warmed to the center. Possible to freeze; great option for meal prep!
