How to Make It

Prepare Vegetables

Chop onion, pepper and garlic. This is also a good time to prepare toppings like tomato, guacamole and lime wedges.

Make Mexican Rice

Warm oil in a large pan. Add onion and bell pepper and cook until the onion softens. Add garlic and cook until it’s fragrant.

Add the remaining Mexican-style rice ingredients: Rice, tomato, vegetable broth, salt, cumin, paprika, dry oregano and pepper.

Stir to combine the vegetables, rice and spices.  Place a lid on your pan and simmer until the rice is tender and absorbs all liquid.

Warm some oil in a pan, then add onion and bell pepper and cook until softened.

Next, cook in garlic, jalapeno, black beans, taco seasoning and lime juice.

Assemble and Serve

Load a bowl with rice and beans, then top with your prepared fixings. I use guacamole, corn, tomato, cilantro, jalapeno slices and lime wedges.

Refrigerate in airtight containers for up to 5 days. This is great for meal prep; turn extra servings into pre-made burrito bowls!

How to Store Leftovers
