BROWN GRAVY

Cook Vegetables

Warm some olive oil in a medium sauce pot. Add minced onions, garlic and mushrooms and cook for 10 minutes.

Stir flour into the vegetables until a paste forms and cook this for 1 minute. Slowly add water while whisking continuously until the mixture thickens.

Prepare Roux Base

Flavor Gravy

Add more water and whisk to make sure there are no clumps of flour remaining. Add all remaining flavorings except for the cream.

Thicken Gravy

Whisk until the bouillon and miso are well dissolved. Cook the gravy for 5-8 minutes, then stir in vegan cream.
