Vegan Blueberry Muffins

These soft, fluffy muffins are loaded with delicious blueberry flavor. They're the perfect snack or dessert!

Plant-based milk Apple cider vinegar Sugar Vegetable oil Vanilla extract Flour Baking powder Baking soda Blueberries

1. Whisk Wet Ingredients 2. Stir in Dry Ingredients 3. Bake in Oven 4. Cool and Serve

How to Make It

Whisk Wet Ingredients

Whisk milk and apple cider vinegar and sit for a minute. Whisk in the sugar, oil and vanilla until well combined.

Step 1:

Stir in Dry Ingredients

Add flour, baking powder and baking soda along with a pinch of salt. Stir until mostly combined, then add blueberries and mix until just combined.

Step 2:

Bake in Oven

Prep a 12-slot muffin tray and scoop in the batter. Bake for 20-25 min in an oven preheated to 350 F.

Step 3:

Cool and Serve

Remove from oven and let sit for a few minutes.  Carefully remove from tray and place onto a wire rack.

Step 4:

Place in airtight container. Countertop = 2-3 days Refrigerator = 5 days Freezer = 3 months
