Sweet Potato Burritos

This easy recipe pairs beans and vegetables for a tasty, super nutritious meal! Just load with your favorite toppings, wrap and enjoy.

Ingredients

Sweet potato Taco seasoning Vegetable oil Refried beans Nutritional yeast Garlic powder Onion powder Smoked paprika Ground cumin seed Salt Black pepper Tortillas Sour cream Kale

How to Make It

Roast Sweet Potato

Cube some sweet potato. Toss with oil and taco seasoning on a baking pan. Roast until they’re soft and start browning slightly.

Mix Refried Beans

Add refried beans to a mixing bowl with all the spices. Stir until the beans are evenly mixed, then taste and adjust the seasoning to your liking.

Prepare all other filling ingredients. I use thinly sliced kale tossed with citrus juice and cashew sour cream.

Spread refried beans onto the center of each tortilla.  Top with roasted sweet potatoes and your other filling ingredients.

Assemble Burrito

Roll the burritos tightly, folding in both ends and rolling over until secure.  Serve and enjoy!

It's best to eat burritos the day they're wrapped. Keep leftover ingredients in separate airtight containers for up to 5 days.
