This dairy free dip is made with white beans, cashews and cauliflower.  Just blend the base, then mix in spinach and artichoke!

How to Make It

Prep and Cook Base

Step 1:

Cook onion in some oil over medium heat, then add cauliflower and cashews. Cook until the cauliflower is tender.

Prep Artichoke

Step 2:

Add liquid from the can of artichokes to your blender. Chop the artichoke hearts and set aside.

Prep Spinach

Step 2:

Thaw a block of frozen, chopped spinach. Use a mesh strainer to press out excess water and set aside.

Blend into Dip

Step 4:

Add all ingredients except for spinach and artichoke. Blend until smooth.

Blend into Dip

Step 4:

Pour into a bowl, then add the artichoke and spinach. Stir until well combined.

Refrigerate in an airtight container for up to 1 week. Freeze using a freezer-safe container for up to 3 months.
