Prep and Cook Base
Step 1:
Cook onion in some oil over medium heat, then add cauliflower and cashews.
Cook until the cauliflower is tender.
Prep Artichoke
Step 2:
Add liquid from the can of artichokes to your blender.
Chop the artichoke hearts and set aside.
Prep Spinach
Step 2:
Thaw a block of frozen, chopped spinach.
Use a mesh strainer to press out excess water and set aside.
Blend into Dip
Step 4:
Add all ingredients except for spinach and artichoke. Blend until smooth.
Blend into Dip
Step 4:
Pour into a bowl, then add the artichoke and spinach.
Stir until well combined.
Refrigerate in an airtight container for up to 1 week.
Freeze using a freezer-safe container for up to 3 months.
