Plant-based Greek Salad

This Greek salad is packed with colorful, fresh veggies and homemade dressing.  Serve over lettuce or pasta.

How to Make It

Prep Dressing and Feta

Step 1:

Prep a batch of tofu feta and Greek dressing (or use store-bought alternatives).

Prep Vegetables

Step 2:

In a large mixing bowl, add all vegetables, washed and chopped to desired size. Toss with dressing.

Assemble Salad

Step 3:

Chop lettuce or cook pasta. Add vegetable mix and top with dairy free feta cheese.

Refrigerate tossed veggie mix for up to 5 days. Keep salad base and dairy free feta separate until ready to serve.
