Elevated Pesto Pasta

This recipe is packed with flavor and nutrition.  With broccoli, chickpeas and caramelized onions, it's the perfect pasta meal!

Dairy Free Pesto

While you could use any pesto, this pasta recipe includes a homemade dairy free pesto that's still creamy and cheesy!

Recipe Ingredients

1. Prep Caramelized     Onions 2. Prep Pesto Sauce 3. Prep Broccoli +     Chickpeas 4. Cook Pasta 5. Mix and Serve

How to Make It

Prep Caramelized Onions

Step 1:

Chop onions and cook in a pan with olive oil. Stir as needed, adding water as needed to prevent sticking.

Prep Pesto Sauce

Step 2:

Add all ingredients to a food processor and pulse to a fine consistency.  Can also use store-bought.

Prep Broccoli + Chickpeas

Step 3:

Cut broccoli into small florets and steam or boil to desired tenderness. Drain and rinse a can of chickpeas, or cook from raw.

Cook Pasta

Step 4:

Cook your pasta of choice according to package directions. I use whole wheat pasta for this recipe and it works great!

Mix and Serve

Step 5:

To your cooked pasta, add pesto sauce, caramelized onions, steamed broccoli and chickpeas. Toss until everything is well coated with pesto.

Refrigerate in an airtight container for up to 5 days.  Reheat in microwave or on stovetop over low heat.
