How to Make It

Prep Caramelized Onions
Step 1:
Chop onions and cook in a pan with olive oil. Stir as needed, adding water as needed to prevent sticking.
Prep Pesto Sauce
Step 2:
Add all ingredients to a food processor and pulse to a fine consistency.
Can also use store-bought.
Prep Broccoli + Chickpeas
Step 3:
Cut broccoli into small florets and steam or boil to desired tenderness.
Drain and rinse a can of chickpeas, or cook from raw.
Cook Pasta
Step 4:
Cook your pasta of choice according to package directions.
I use whole wheat pasta for this recipe and it works great!
Mix and Serve
Step 5:
To your cooked pasta, add pesto
sauce
, caramelized onions, steamed broccoli and chickpeas.
Toss until everything is well coated with pesto.
Refrigerate in an airtight container for up to 5 days.
Reheat in microwave or on stovetop over low heat.
