Quick + Easy Minestrone

This soup is easy to make with basic ingredients. It creates a hearty soup to enjoy anytime! Great for weekly meal prep.

Beans + Vegetables Onion, Garlic, Celery, Carrot,  White beans, Green beans, Tomato puree, Spinach Herbs + Spices Oregano, Basil, Thyme,  Black pepper, Herb salt,  Nutritional yeast, Bay leaves Additional Ingredients Olive oil, Vegetable broth

How to Make It

Prep Vegetables + Other Ingredients

Step 1:

Peel then dice the onion and carrots.  Dice the celery and mince the garlic.

Step 1:

Trim the green beans and cut into bite-sized pieces. Drain and rinse the beans and get out all the other ingredients.

Cook Minestrone

Step 2:

Warm some olive oil in a pot, then add onion, celery, carrot and garlic. Cook, stirring regularly, until your vegetables soften.

Add the remaining ingredients to the pot, except for spinach.  Stir until well combined.

Step 2:

Simmer, stirring regularly. When the pasta is almost done, add spinach and let it wilt into the soup.

Serve Soup

Step 3:

Remove any bay leaves before serving hot. This soup is also delicious with a side of garlic bread!

Cool to room temperature, then transfer to an airtight container.  Refrigerate for up to 1 week. Can freeze up to 3 months.
