Prep Vegetables + Other Ingredients
Step 1:
Peel then dice the onion and carrots.
Dice the celery and mince the garlic.

Trim the green beans and cut into bite-sized pieces.
Drain and rinse the beans and get out all the other ingredients.
Cook Minestrone
Step 2:
Warm some olive oil in a pot, then add onion, celery, carrot and garlic.
Cook, stirring regularly, until your vegetables soften.

Add the remaining ingredients to the pot, except for spinach.
Stir until well combined.
Cook Minestrone
Step 2:
Simmer, stirring regularly.
When the pasta is almost done, add spinach and let it wilt into the soup.
Serve Soup
Step 3:
Remove any bay leaves before serving hot.
This soup is also delicious with a side of garlic bread!
Cool to room temperature, then transfer to an airtight container.
Refrigerate for up to 1 week.
Can freeze up to 3 months.
