Vegan Stir Fry Recipe

Lentils are a great way to add protein into your plant-based meals. This stir fry recipe tastes great and will keep you feeling full and satisfied.

Stir Fry: Onion, garlic, ginger, pepper, celery, carrot, zucchini, oil, lentil, cashew Sauce: Soy sauce, hoisin, rice vinegar, mirin, lime juice + zest, sesame oil, sugar, starch

How to Make It

Prep Vegetables

Step 1:

This recipe cooks quickly. Make sure any vegetables you'll use are washed, peeled, diced, minced or sliced how you want them.

Prep Sauce

Step 2:

Like with the vegetables, you'll want to prepare a stir fry sauce before cooking. Mix all sauce ingredients together and set aside.

Cook Stir Fry

Step 3:

Warm some oil in a large pan, then add onion. Next, add garlic, ginger, celery and carrots. Once softened, add bell pepper and zucchini.

Step 3:

Once the vegetables are nearly finished cooking, add lentils, cashews and stir fry sauce. Stir continuously until your sauce thickens.


Step 4:

Serve hot, either alone or with a side of rice, and garnish to your liking. 

Refrigerate in an airtight container for up to 1 week. Reheat in a microwave or on stovetop until warm.
