Kale slaw is an easy, nutritious and flavor-packed salad. This recipe uses a beautiful medley of colors and flavors!

How to Make It

Prep Salad Vegetables

Step 1:

Wash your kale and remove large stems. Slice very thinly and add to a bowl. Massage until the leaves turn a bright green color.

Step 1:

Grate, shred or slice your carrots, red cabbage and green onion.  Add these to the mixing bowl along with your kale.

Prep Dressing

Step 2:

Dice or crush garlic cloves. Mince or grate ginger. Add to a small bowl or jar with soy sauce, tamari, rice vinegar, sesame oil and maple syrup.

If using a jar, place the lid on and shake to combine. If using a small bowl, use a small whisk or fork to combine the ingredients.

Toss and Serve

Step 3:

Pour dressing and toss. Serve right away or refrigerate overnight.  Top with sesame seeds (optional) and enjoy!

Refrigerate in an airtight container for up to 5 days.  You'll want some leftovers. Once marinated for several hours your kale will taste even better!
