Add vinegar and soy milk into a measuring cup.
Whisk the vinegar and milk, then set aside.
Whisk Dry Ingredients
Whisk flour, sugar, salt and baking soda together in a large mixing bowl.
Cut in Butter
Add cold vegan butter to your flour mixture in small pieces.
Cut it throughout the flour (with a pastry cutter or fork).
Pour your buttermilk into the buttery flour and stir until dough forms.
Gently knead the dough and transfer to a baking tray.
Bake in Oven
Shape the dough into a ball, keeping as much height in the loaf as possible.
Score an X into the top of your dough with a knife, then bake for 45-50 minutes.
