These cucumber rolls are filled with flavorful ingredients. They pair perfectly to make a refreshing appetizer or snack.

How to Make It

Slice Cucumber

Create long, thin strips of cucumber with a mandolin slicer (or vegetable peeler).  Aim for 24 cucumber strips; you’ll need at least 2 large cucumbers for this.

Add shelled pistachio, onion, mint, lime and salt to a small food processor. Pulse until the mixture is finely chopped.

Prepare Filling

Just before you assemble, mash some avocado. I simply use a fork to mash.

Take one slice of cucumber, then add avocado and pistachio mix onto one end. Pick up the end and roll, then secure with a toothpick.

Assemble and Serve

Serve immediately after rolling for best presentation! These are a great appetizer.
