How to Make It

Prep Vegetables

Step 1:

Wash and dice/chop your veggies into small to medium-sized pieces. Gather remaining ingredients to make cooking easier.

Cook Vegetables

Step 2:

In a large pot, melt butter and add chopped onion. Once softened, stir in garlic and potato. Cook for another couple of minutes.

Cook Vegetables

Step 2:

Add vegetable broth, salt, Italian seasoning and nutritional yeast. Add broccoli and cook until fork tender.

Blend, Season, Serve

Step 3:

Remove the pot from heat and add coconut milk. Blend until smooth and adjust seasoning to taste (more salt or black pepper).
