CRANBERRY ORANGE

Make Flaxseed "Egg"

In a small bowl, mix some ground flaxseed with orange juice and orange zest.  Set this aside to add later.

Mix Wet Ingredients

Whisk plant milk and apple cider vinegar in a bowl.  Whisk in granulated sugar, oil and vanilla extract, then add your prepared flax egg and whisk through.

Add Dry Ingredients

Add flour, baking powder, baking soda and salt.  Stir until the batter is almost mixed then add cranberries. Mix until just combined.

Bake in Oven

Prepare a 12-slot muffin tin with muffin liners. Divide the batter evenly into these 12 muffin slots. Bake at 350 F for 20-22 min.

Glaze (Optional)

To make glaze, stir together icing sugar and orange juice.  Make sure your muffins are fully cooled before dipping into the glaze.
