Cut your cauliflower into small, bite-sized pieces.Add these pieces into a small-medium baking dish.
Prep Sauce
Step 2:
Add vegan butter to a dish along with minced garlic. Microwave until melted.Add remaining ingredients, including soy milk, cheese and starch. Whisk together.
Assemble and Bake

Pour sauce over your cauliflower, then stir to coat in sauce.Place a lid (or foil) on the dish and bake, stirring at least once during the cooking process.
Serve and Enjoy

Serve hot once the cauliflower is fork-tender.This is great paired with a vegan seitan "meat" roast!
Refrigerate in an airtight container for up to 5 days.Reheat in a microwave or oven until warm through.
