Apple Cranberry Quinoa Salad

This fresh quinoa salad is made with walnuts and a light vinaigrette! It’s a recipe with endless variations and is ideal for meal prep.

How to Make It

Boil quinoa in water for 12-15 minutes. Once your quinoa absorbs all the water, remove from heat and "fluff" with a fork. Place into a mixing bowl bowl and refrigerate to chill.

Step 1: Cook Quinoa

Wash, core, dice apples Dice onion, cilantro, walnuts Add all salad ingredients to a  bowl of chilled quinoa.

Step 2: Prep Other Ingredients

Stir, whisk or shake vinaigrette ingredients together.

Step 3: Make Vinaigrette

Add the vinaigrette and toss until fully combined. Serve chilled.

Step 4: Toss, Chill and Serve
