I love Mexican style dishes because they always have such rich flavours and are super easy to make plant-based. Guacamole is the perfect accompaniment to any Mexican dish, as an appetizer, or dip on its own. It’s extremely easy to make and you can customize it to your taste!
To start the guacamole, mince 1-2 cloves of garlic, grate (or finely dice) a chunk of red onion, and wash then chop some cilantro.
Mash 2 ripe avocados (make sure they are soft enough to mash easily) and stir in 2 tsp of the minced garlic, 2 tablespoons of the grated onion, and cilantro to taste (I used about ¼ C).
Add ½ teaspoon of salt, 2 teaspoons of lime juice and ¼ teaspoon of chili powder. Taste the mixture and adjust the seasoning if needed. This guacamole would be a great addition to my quinoa taco recipe! Enjoy!
- 2 ripe avocados
- 2 tsp minced garlic
- 2 tbsp grated red onion
- ¼ C chopped cilantro
- ½ tsp salt
- 2 tsp lime juice
- ¼ tsp chili powder
- Peel two avocados and remove the pits. Mash them into a desired consistency; I like to leave some small chunks but you can make it as smooth as you like.
- Mince the garlic, grate the onion, chop the cilantro and stir into the mashed avocado.
- Add the remaining ingredients (salt, lime juice, chili powder) to taste.
